    自制米发糕终于成功

        一直喜欢吃米粑粑、米发糕,但地处偏远的城乡结合部,外面卖的有点心存疑虑,于是萌发了自己做的念头。试验N次,终未成功。第一次是想当然的用米酒发,未发起来;第二次还是想当然的改用干酵母发还是不行,总是米浆和水分离,所以发不起来。这才想到到网上看看,打开Google一搜,果然不少条目,终于找到一篇图文并茂介绍极详细的文章,于是如法炮制,果然成功啦!
     
       原来这发米浆和发面团是不同的,诀窍就在于发米浆时需要先煮一点熟的芡,和生米浆调和在一起,米浆和水就不会分离了。
       家中有小宝宝的朋友可以学着做做,不添加任何添加剂,真正的放心食品咯。
       具体方法如下:
       用隔夜浸好的大米,打磨成米浆;奶锅中倒入一碗水煮开后,加入红糖和一小勺生米浆煮成熟米糊,趁热兑生米浆,搅拌均匀;这时调面种,酵母粉加些温水和匀,加些面粉拌好;将生熟米浆倒入面种碗中,充分搅匀后置一边盖上盖发酵两小时左右;最后用开水蒸锅大火蒸十五分钟停火,稍后掀盖取出即可。
